Chances are your first taste of a mushroom was that of Agaricus bisporus, in some stage of maturity. When you harvest your mushrooms will determine the taste. Early in their fruit body growth, Agaricus bisporus are white with a mild flavor. These are your typical white buttons or pizza mushrooms. As they turn brown, but before their caps open the flavor becomes more rich and their water content is higher. This stage is usually marketed as Creminis, Baby Bella or Italian mushrooms. The finale stage, after the caps have opened and they reach 4-6 inches, they are harvested as Portobellos or Giant Creminis. The flavor has deepened and with less water, they have a denser, meaty texture.
